It’s called “Chicken Fromage” and I have been making it for years and years.
It was one of my young daughter’s favorite dinners!
I was very fortunate to not have a picky eater child; in fact, my daughter loved broccoli and brussel sprouts from a very early age. I’m hard pressed to think of something she really would NOT eat. I guess lamb would have to be high on that list (not that we had it more than once a year…maybe). Anyway, this was a quick and tasty dinner and yes, there were leftovers for the next night.
We always serve with cranberry sauce; and always the kind with whole berries!
This is SO easy.
You can vary amounts easily. I substitute Panko for half the bread crumbs.
6 cutlets chicken, skinned and split
1 clove garlic
1/2 c melted butter
1 c fine dry bread crumbs
1/2 c finely grated sharp Cheddar cheese
1/4 c. grated Parmesan cheese
salt, pepper
Add garlic to melted butter and let stand.
Mix together bread crumbs and cheese.
Salt & pepper chicken breasts, then dip in melted butter, then in crumb mixture.
Pour any remaining butter over the chicken.
Bake uncovered at 350 for 45 min.
